3 Deputy Chefs for 2 high-end restaurants – Nairobi, Kenya

Two high end and recently opened restaurants, belonging to an International Energy company, is looking to recruit for their restaurants in Nairobi. The successful candidates must have more than five years’ experience as a chef in a high-end restaurant setting, have a food handling certificate, must be thoroughly familiar with safety requirements, safe work practices & health regulations and have experience in preparing local and international cuisines. They will be responsible for ensuring all kitchen tasks are performed on time & meeting the quality standards as well as ensuring all food safety requirements are maintained in the kitchen during shift.

Responsibilities

  • Ensuring all ingredients are stored & labelled according to SOPs and verify the stock levels in the kitchen are respected.
  • Ensure mise en place are ready on time as well as maintain a clean space after mise en place.
  • Assist in preparing the team’s schedule to meet quality & operating expenses targets.
  • Organize workflow, maintain order and discipline in the kitchen during the shift.
  • Ensures all kitchen tasks are performed on time & meeting the quality standards during his/her shift.
  • Ensure representatives from the kitchen attend service line ups and meetings.
  • Apply controls to minimize food wastage and theft during shift.
  • Make products/ingredient requisition during shift.
  • Ensure all food safety requirements are maintained in the kitchen during shift.
  • Guarantee all menu items are prepared in accordance with the restaurants SOPs and policies.
  • Adhere to the cleaning and maintenance schedule for all kitchen areas and equipment.
  • Always, immediately and proactively report any issue related to the quality / freshness of ingredient and any need of reports.

Qualifications

  • Must have at least five years’ experience as a Chef
  • Have a Certificate/Diploma from a reputable institution.
  • Must have Food handling certificate.
  • Must be thoroughly familiar with safety requirements, safe work practices and health regulations pertaining to food preparation and service.
  • Enjoy cooking and able to organise efficient work schedules.
  • Fluent in spoken and written English and Kiswahili Languages
  • Good interpersonal and communication skills, oral and written.
  • Able to work as a leader and as part of a team and have high level of personal cleanliness.
  • Be punctual and excellent time management skills.
  • Honest and attention to detail as well as demonstrate the highest ethical and professionalism.
